Ingredients
1 lb chicken tenderloins
½ lb pasta of choice
1 zucchini, cut into rounds
1 block fresh parmesan
Olive oil
Seasonings: onion powder, salt, pepper
Instructions
Roast the Chicken & Zucchini
Preheat the oven to 425°F. Place the chicken tenderloins and zucchini on separate sheet pans. Drizzle both with olive oil and season with onion powder, salt, and pepper. Bake until the chicken reaches an internal temperature of 165°F and the zucchini is tender and lightly golden.
Prepare the Pasta
Cook the pasta according to package directions. Drain, rinse, and set aside.
Assemble the Bowls
Add the cooked pasta, roasted chicken, and zucchini to a large bowl. Toss everything together until combined. Divide into bowls and finish with freshly grated parmesan, a drizzle of olive oil, and additional salt and pepper to taste.
